A FORMER pub and hotel could soon become home to a pop-up bar and restaurant.

Advertisements have been placed in the windows of the former County Hotel on North Berwick High Street highlighting plans for a new short-term venture called ‘Beach Hut’.

The former 10-bedroom hotel and bar has been closed for more than six months following the departure of previous licensee Tony Breathnach.

The brightly coloured adverts say the venue is looking for full and part-time chefs, managers and waiting staff.

A spokeswoman for building owners Star Pubs & Bars said: “We are keen to reopen The County Hotel as soon as possible.

“We have an experienced and highly talented operator who is interested in launching an exciting pop-up bar and restaurant at the pub in time for the summer.

“As soon as the plans and timings are finalised, we will be able to share more information.

Last month, the Courier told how Star Pubs & Bars, part of Heineken UK, had longer-term plans for the premises, which included a major refurbishment.

If proposals submitted to East Lothian Council are approved, changes would be made inside the building, with the bar server and public toilets relocated. Outside, a single-storey outbuilding would also be given a new lease of life to form an additional enclosed bar area which would serve food.

The company spokesman added: “We have a long-term vision for The County Hotel and we are developing plans for a major investment programme to create a fresh and exciting pub.

“We are looking for a new licensee to work with us on this great venture. In the meantime, The County Hotel will be reopened with temporary managers in place.”

Judy Lockhart, chairwoman of the town’s community council, said: “The community council is pleased to note that a pop-up restaurant/bar will be opening shortly in The County. High streets are having a tough time at the moment and the community council are thrilled to see initiatives such as pop-up businesses being utilised to prevent units lying empty.

We hope that a permanent business can be installed for the longer term; however, for the time being, this is fantastic news.”
